    5 mL 1 4 tsp salt 1 mL 1 cup milk 250 mL 1 egg Coronation Grape Syrup 2 cups Coronation grapes stemmed 500 mL 1 2 cup granulated sugar 125 mL 1 tbsp lemon juice 15 mL Directions Coronation Grape Syrup In large saucepan crush grapes with 1 2 cup 125 mL water bring to boil Boil for 10 minutes remove from heat Strain reserving juice and discarding grape skins Return juice to saucepan add sugar and lemon juice Bring to boil over medium high heat boil for 10 minutes or until syrupy and reduced to 2 3 cup 150 mL Let cool Meanwhile in skillet melt butter over medium heat sauté pear and brown sugar for 6 to 8 minutes or until pears are tender Set aside Whisk together flour granulated sugar baking powder and salt In separate bowl whisk milk with egg stir into flour mixture just until combined Let stand for 15 minutes Fold reserved pear mixture into batter Preheat waffle maker according to manufacturer s instructions Pour cup 175 mL batter into waffle iron cook for 4 or 5 minutes or until golden Repeat with remaining batter Serve waffles with syrup Nutritional Info Nutrition Facts

    2008 http fooddaycanada ca recipes fresh winter pear and apple chutney Makes 4 cups 1L Print tip When pears are no longer available simply add more apples Ingredients 2 cups Peeled chopped Ontario Bosc Pears 500 mL 2 cups Peeled chopped Ontario Spy Apples 500 mL 1 tbsp Coarse pickling salt 15 mL 1 1 2 cups Granulated sugar 375 mL 3 4 cup Apple cider vinegar 175 mL 2 Garlic cloves peeled and minced 3 4 cup Finely chopped onion 175 mL 1 tsp Dry ginger 5 mL 1 3 cup Lemon juice 75 mL 1 2 tsp Red pepper flakes 2 mL 1 2 cup Golden raisins 125 mL 1 2 cup Finely chopped candied ginger 125 mL Directions In a large bowl cover the pears and apples with a brine made of 2 cups 500 mL cold water and the pickling salt Let stand for 4 to 6 hours Drain thoroughly While the fruit drains combine the sugar vinegar garlic onion dry ginger pepper flakes lemon juice and raisins in a heavy saucepan Stir well and place on medium heat Add the fruit and bring to a boil Reduce heat till the chutney is barely bubbling Simmer

    Ingredients 2 Ontario Bartlett or Bosc pear sliced 1 4 inch 5 mm core removed 2 1 2 small red onion cut into rounds 1 2 1 tbsp olive oil 15 mL 2 tbsp all purpose flour 30 mL 1 lb pizza dough 500 g 1 4 cup prepared pesto 50 mL 2 slices prosciutto cut into thin strips 2 3 oz crumbled goat cheese or gorgonzola 75 g 1 2 cup lightly packed arugula leaves 125 mL Directions Preheat grill to medium Brush pears and onions with olive oil Place on grill and close lid Grill turning once until grill marked and softened about 3 minutes Remove from grill and set aside Meanwhile on lightly floured surface roll out dough to 16 x 12 inch 40 x 30 cm rectangle transfer to a baking sheet Brush dough with remaining oil and place oil side down directly on grill Grill uncovered until bubbles form on top and grill marks form on bottom about 3 minutes do not worry if dough sags a bit when first placed on grill as long as it has been preheated the dough will quickly stiffen up Use tongs to flip pizza close lid and grill
