    quartered and pitted Ontario prune plums 1 L 1 3 cup brown sugar 75 mL 1 tbsp lemon juice 15 mL 1 2 tsp ground ginger 2 mL 1 4 cup all purpose flour 60 mL Cobbler Topping 1 cup all purpose flour 250 mL 1 3 cup granulated sugar 75 mL 2 tsp baking powder 10 mL 1 4 tsp baking soda 1 mL pinch salt 1 4 cup cold unsalted butter cut into small pieces 60 mL 1 2 cup buttermilk 125 mL 1 tsp vanilla extract 1 mL 1 tbsp coarse sugar 15 mL Directions Filling Preheat oven to 375 F 190 C Toss peaches and plums with brown sugar lemon juice and ginger Sprinkle evenly with flour and toss to combine Spread into a 9x13 inch 3 L baking dish Cobbler Topping Stir flour with granulated sugar baking powder baking soda and salt Cut in the butter using a pastry blender two knives or fingertips until mixture is mealy Whisk buttermilk with vanilla Stir into flour mixture just until combined do not over work dough Drop large spoonfuls over the filling in a random pattern Brush cobbler topping with buttermilk and sprinkle evenly with coarse sugar

  • Ontario Tender Fruit : Recipe : Pecan Scones with Ontario Plum Compote
    Serve with coffee or tea Ingredients Compote 8 Ontario plums pitted and cut into 1 2 inch 1 cm cubes 8 2 tbsp sugar 30 ml 1 tsp four spice 5 ml Scones 2 1 4 cups all purpose flour 550 ml 1 2 cup roughly chopped toasted pecans 125 ml 2 tbsp sugar 30 ml 2 1 2 tsp baking powder 12 ml 1 2 tsp baking soda 2 ml 1 4 tsp salt 1 ml 1 2 cup cold butter cubed 125 ml 1 cup buttermilk 250 ml 1 lightly beaten egg 1 1 beaten egg for brushing over the scones before baking 1 Chantilly cream 2 3 cup 35 cream 150 ml 1 tsp sugar 5 ml 1 4 tsp vanilla extract 1 ml Directions Compote Place plums sugar and four spice in a small heavy bottomed saucepan over medium high heat Bring to a simmer reduce heat to medium low and continue to simmer stirring frequently for 45 to 60 minutes until reduced by half Remove from heat and allow to cool Scones Preheat the oven to 425 F 220 C In a bowl combine flour pecans sugar baking powder baking soda and salt mix well Using a pastry knife or two knives cut the butter into pea sized pieces into the flour mixture Add the buttermilk and mix with fork until combined Transfer dough to a well floured surface and using hands work into a ball do not overwork dough Press dough down to form 1 inch 2 5 cm thick circle Using a knife cut the circle into 8 pie shaped pieces With a spatula transfer scones to a parchment lined baking sheet Lightly brush the scones with beaten egg and bake for 12 to 15 minutes until golden brown Transfer to a cooling

    Repeat cutting the half that still has the pit in half then twisting the stone from the center This technique helps a lot when the pits are tightly imbedded in slightly underripe fruit Recipe Suggestion Purée this jam to make a delicious plum sauce for dipping chicken fingers Ingredients 5 cups sliced pitted red plums 1 25 L 1 3 4 cups water 425 mL 1 tbsp lemon juice 15 mL 2 tsp grated gingerroot 10 mL 5 cups granulated sugar 1 25 L Directions 1 In a large deep heavy bottomed pot combine plums and water Bring to a boil over high heat stirring occasionally Reduce heat and simmer for about 20 minutes or until softened Stir in lemon juice and ginger Bring to a full boil over high heat stirring constantly 2 Add sugar in a steady stream stirring constantly Return to a full boil stirring constantly to dissolve sugar Reduce heat to medium high and boil rapidly stirring often and reducing heat further as mixture thickens for 10 to 12 minutes or until thickened Test for setting point for details see page 19 3 Remove from heat and skim off any foam 4 Ladle into sterilized jars

    Ingredients 2 medium beets trimmed 2 1 4 cup cider vinegar 50 ml 1 tsp honey or maple syrup 5 ml 1 tsp grainy mustard 5 ml 1 2 cup extra virgin olive oil 125 ml 1 tbsp chopped fresh chives 15 ml 1 2 tsp each salt and fresh cracked pepper 2 mlL 1 1 2 Ontario plums pitted and cut into wedges approximately 6 to 8 plums 750 g 1 4 cup thinly sliced red onion 50 ml 2 cups baby arugula or watercress 500 ml 3 oz crumbled blue cheese or goat cheese 75 g 1 4 cup chopped toasted walnuts 50 ml Directions Preheat oven to 375F 190C Wrap beets tightly in foil package Place on baking sheet Roast beets until tender about 60 minutes Unwrap beets cool completely Peel beets and cut into wedges Set aside in bowl In bowl whisk vinegar honey and mustard until combined Slowly whisk in olive oil until blended Whisk in chives salt and pepper Pour 1 tbsp 15 ml of dressing over beets and toss to combine In large bowl combine plums red onion and arugula Toss with remaining dressing Arrange beets over a large platter Top with plum

    60 mL 12 rice paper wraps 24 large mint leaves Coronation Grape Sauce 1 4 cup water 60 mL 2 tbsp cornstarch 30 mL 4 cups Ontario Coronation grapes 1 L 1 2 cup granulated sugar 125 mL 1 4 cup lemon juice 60 mL pinch salt Directions Salad Rolls Toss pears nectarines and plums with honey and chopped mint Soak a rice paper wrap in hot tap water for 10 seconds or until pliable carefully transfer to a slightly damp kitchen towel Arrange 2 mint leaves in the center of the wrap leaving space on the sides Top with some of the fruit mixture Firmly fold the bottom half of the wrap over the filling Fold in the sides and roll up to completely enclose filling Repeat with remaining fruit wraps Store in the refrigerator tightly covered with plastic wrap for up to 2 hours Cut in half on an angle before serving with Coronation Grape Sauce for dipping Coronation Grape Sauce Whisk water with cornstarch and until smooth set aside Add grapes sugar lemon juice and salt to a heavy bottomed saucepan set over medium high heat Bring to a simmer crushing fruit with potato masher to release
