    By Kristin Menas June 30 2015 Tweet Leave a comment Top types of appetizers According to Technomic MenuMonitor data soup is the leading type of appetizer on Canadian menus Soup is often spotlighted as a rotating seasonal starter option with operators highlighting local in season ingredients The offering can also vary from light to heavier varieties The top three types of soup appearing on menus are Asian soups soup of the day specials and seafood soups respectively Salad is among the top five appetizers on menus as well Canadian consumers are particularly health conscious in recent years making salad an ideal starter option Salads are also an easy opportunity for operators to showcase seasonal ingredients as toppings such as strawberries and sunflower seeds Joey s Seafood Restaurants menus carry a Summer Salad made with romaine lettuce mandarin oranges sunflower seeds and red onion vinaigrette Also noteworthy is the placement of non breaded proteins on the list such as meat skewers and seafood Some popular seafood appetizers include smoked salmon grilled shrimp and oysters Many other non breaded proteins are inspired by Middle Eastern and Mediterranean cuisines with menus featuring items like tandoori chicken and lamb skewers See also Top seven

  • Today's tip for Canada's restaurant and foodservice industry: Craft an appropriate reservation policy
    appropriate reservation policy will help an operation increase sales and improve the quality of service It is not as simple as deciding whether to accept reservations but rather managers should focus on the appropriate conditions under which to accept reservations Generally try to push reservations to slower times before or after the peak meal period Whenever possible large groups should be accepted but not exceed 20 per cent of the total seating during prime service hours Establish reasonable time allowances for reservations and communicate these to the guests in advance Serving larger groups is challenging so assign an appropriate number of service staff to the group to ensure service is quick and selling opportunities are not missed Postpone assigning reservations to specific tables as long as possible This will reduce the likelihood of holding a table empty for too long in anticipation of the reservation s arrival and will reduce wait times for walk in guests Few operations can afford to lose potential customers but accepting reservations must be done in a way that does not harm existing business Courtesy of David Swanston a Hospitality and Foodservice Consultant Principal of Focused Industry Training Seminars and is an instructor at major
